Zucchini Noodles aka: Zoodles

1. Find 1 large zucchini that is enough for 1 serving.
zoodles 12. With a Julienne peeler, peel your zucchini skin and all.

Put all of of your Zoodles in a colander and sprinkle with some salt.  Mix the salt all around the Zoodles and let them sit for a few minutes, 10-15 minutes will do.  This will get all of the extra moisture out of the zucchini.  Make sure to drain when you are ready to cook them. zoodles 34. With a tablespoon or so of Olive Oil, cook your Zoodles for a few minutes until they are soft and tender.  Usually around 5 minutes is what I find to be best. zoodles 45. Enjoy!

  1. I’ve recently started watching how I eat. I knew I had to cut the sugar, flour, bread, and pasta out of my diet. It’s going to be a huge transition but finding ways to replace high carb noodles with healthy veggies will lesson the drawbacks of cutting out things that I love. Thank you for posting this! A person could even make pesto zucchini “pasta.” Ideas, ideas.
